In either movie... why is it that the Alien would sometimes kill, but then sometimes "cocoon" a victim?

In Alien, the first victim (skinny dude) got killed, but then "Dallas" was cocooned.

what gives?

This is how I saw it. Cocooning was always performed for the purpose of reproduction. The individual was taken alive if possible and then used as a host for the growing young.

That is seen more easily in Aliens.

As for the reason it occurred in Alien with Dallas, I always believed the xenomorphs had the potential to become a queen if one isn't readily available. IMO, the alien was preparing to reproduce.

The cocooned ones were food for baby aliens.

I could be wrong but I think there was a deleted scene in Alien where those who were cocooned actually were being "converted" to make more eggs to produce face huggers. This was before Aliens and the idea of a Queen Alien laying eggs. Could be completely wrong though.

Cocooning was not in the original Alien theatrical release. The scenes were shot and came out later on DVD. The cocooning in Aliens came as a real shock to the moviegoers of the time.

Actualy there is a deleted scene in Alien where cooconed cap. Dallas asks Ripley to kill him. And she torches him with the flame thrower. (I have this scene). But the main point about leaving it out is that it would sugest that the alien "drone-warrior" is actualy capable of creating the whole alien life cycle. Beacause cap. Dallas wasn't hugged. There are NO face huggers on the SHIP remember. He was used to create the face hugger egg itself. Therefore it would sugest that there is no queen that hatches facehugger eggs and that a drone uses live beings to somehow secrete the egg around them and probably use them as biologicall raw material for the face hugger egg.
