Lump charcoal, wing sauce, wings, recent cooks, etc

Restocked the lump store pile for fall, up to roughly 150 lbs, Wicked Good is my fave but looking forward to the sugar maple, $87+ change. The WG is much denser than the BGE lump and harder to light, so use some BGE to light then add WG:



New batch of wing sauce, big bottle is for the wife and neighbors, they can't handle the Red Savina version:


5X and Hot, wife says Hot is awesome:


Wings with chunk of cherry:

I do not like flabby skin wings, roughly 80 minutes at 375-400, no seasoning, indirect:

Sauce buckets, put the lids on and shake and turn until fully coated:




Tuesday reheat in oven, more smoke flavor coming through:


Loin and strip:




I have gotten to where I like wings better than steak. These red lentils may not look like much but was excellent with fresh Vidalia onions, leeks, cilantro, turmeric, smoked chipotle pepper, petite diced tomatoes, and about 10 garlic pods on jasmine brown rice:





Food truck night at the park-grass fed beef burger, supposed to be medium rare, came fully dried and meh, kale Waldorf salad was good, fortunately only a mile walk in cool weather:


Pappasito's tamale app, chicken and pork with green chile sauce, I will not lie it was just short of awesome-then again I love green chiles:


The lady wanted watermelon ritas, the waiter said it was a 40 oz pitcher, then brings out this behemoth, tasty tho:


The beef fajitas were excellent, which is somewhat rare for a Saturday night due to too many patrons, but for whatever reason it was sparse that night. Typical wait is 40-75 minutes and I say no and move on. That place has to print $$$$$$$$$.

I would, but it was spread out over 4-weeks. One thread update instead of drip-by-drip, just knock that shite out. I didn't bore you with the terrible ribs at Hottie Hawgs, either.

Pork shoulder with the sugar maple lump upcoming in a few days.

Y'know, all the raves about Wicked Good led me to purchase a few bags. It is in huge pieces, is a bitch to light, and burns verrrryyy slowly. So I've come to the conclusion it's perfect for low & slow, long-a** cooks, but pretty annoying for anything hot n fast. Back to Royal Oak for my "everyday" grilling.

There is an Ace on the north end of Buckhead that caters to the ceramic crowd. Any Ace should be able to order the lump within their system. The $22 for 22 lbs for WG is worth it as it burns a lot longer than most lump.

That is somewhat valid, but if you mix the two it produces less ash and lights rather quickly. I use an electric starter with no problems. I have not problem using Royal Oak for 30-60 minute cooks, but longer than that I use something different or mix.

Dunno about your Ace, but the Ace online site no longer offers Wicked Good....I bought it online and had it shipped to my local store, as it isn't stocked anywhere around here. That option is gone.

Happy Belly. First time in 4 trips I was disappointed, I will not order any more grass fed product unless it is rare, medium rare has been overcooked at various locations I have tried. The Blaxican puts out some good stuff and my wife got an excellent asian pork sandwich at a truck I don't recall.

Maybe it varies by geographic location. The Ace closer to me said they don't sell enough of it, but I have seen it at at least 3 other locations within 10-miles. Could depend on if they have much local demand. They had roughly a pallet of all 4-brands on the floor at the location I purchased from.

Picnic table at the park, I am not pressure washing for them and was happy to find a seat. Ace for the charcoal.
