A Simple Peach Relish Recipe

Used this with some salmon last night. The relish was awesome...wish my fish had been a bit more fresh.
Ingredients
3 large peaches, medium dice (I didn't peel them)
2 jalapeño peppers, seeded and minced
1/2 large red onion, medium dice
1/2 red bell pepper, med dice
3 cloves minced garlic
1/3 cup minced cilantro
2 T honey
1 t cumin
1/2 cup vinegar
Salt and pepper to taste
Method
Place all ingredients in a boiler, heat to a slow boil, then simmer for 5 minutes . Adjust seasonings and cool for use. Note: diced tomato can be added. I didn't.

Love the fruit relishes on fish. This one looks solid just as it is.

I'm not worried about the peach relish, what was your final decision on the side to go with the fish? You left us hanging.
