Another cool way to poach an egg - Wylie Dufresne

Within this video Wylie Dufresne provides a technique for poaching an egg in the shell that is simple and delivers fantastic results. The video is long, so if you're not interested in watching the whole thing, here's a summary: Add two tablespoons of baking soda to the water, boil it, when the water's boiling, add the eggs and boil for 5:45. Remove from water and place in an ice bath to stop the cooking. Peel (the baking soda in the water makes it much easier to peel), warm back up to temperature if you like prior to serving. The nice thing about this technique is that you get a firm white, runny center, and it maintains the shape of the egg. It's neat and clean relative to the standard of using water/vinegar and dropping the egg in, and it's a lot faster than poaching sous vide.

Watched the whole thing. Dufresne is awesome - this is the first time I've heard that much about him. Never would have pegged him as a big sports lover...
