Spinach and Feta Make It Betta!!

This morning before getting started with a few things I needed to do today I decided to have a little omelet for breakfast. Using fresh baby spinach I made myself a Spinach and Feta Cheese Omelet.
Of course I don't think I need to say that I used some fresh eggs I picked up from the chicken pen yesterday evening.


I think this may just become my favorite omelet.



A couple of slices of multi grain toast made it a meal.



Mmmmm......... Soooo....... delicious!!!

I love a spinach and feta omlette! So does my girlfriend. I normally add tomato, though.

yeah i think tomatoes would be good also. maybe some chorizo also?

Did you cook the spinach before assembly? I've done spinach & feta omelettes before, but I just do it half-moon shaped with the filling on one side--I just make a layer of fresh (non-cooked) spinach leaves with the cheese. Fold top over, flip and cook a minute more, and the spinach is cooked enough.

The dill seems like a nice addition!

I've made a tomato, spinach, feta, Italian sausage omelette. Delicious.

I had a spinach, mushroom, tomato, bacon and cheddar omelet last week. It was wonderful.
