Having pulled pork from Sunday's smoke I was going to make Cuban sandwiches tonight but changed that to what I'll call "The Louisianan".
I warmed some of the pulled pork from Sunday's smoke with a spicy bbq sauce while I griddle warmed a nice size length of Poor Boy Bread.
When the inner side was warmed I started with a good layer of pepper jack cheese, next was some Chisesi's thin sliced ham, then the pulled pork and a little jalapeno pepper relish. I added the top half of the bread and put this on the griddle to toast under a weighted pan.
When done I took it off and added Swiss cheese, lettuce, Creole tomato slices, dill pickles mustard and mayo.
All stacked and ready to eat.
Wow! This was a seriously flavorful sandwich!!!

I always make the mistake of reading these threads too late at night. Now I'm trying to resist heading to the pantry. Looks great

That sandwich would go nicely with a bowl of my soup. Really, you only need to give me one of the halves.

Is that Leidenheimers bread?

No, it Alois J.Binder.
I've been getting it from Rouse's lately because(and I only see this at Rouse's)it's in the typical paper bag but inside the paper bag it's inside of a plastic bag. Makes it stay soft but a quick warming it the oven and it's crisp and delicious.

Looks good but why didn't you put the cheese on before the griddle so it would melt?
