All in the mash. We don't have a ph meter or anything so it's all really just a guess anyway. Keeping it pretty simple so far.

I brewed close to 18 gallons yesterday of an imperial porter. Kicked our asses. I don't know if I have had a rougher brew session in a long time. Got it done though. Clean up happens today unfortunately

Brewed 5+ gallons of mead yesterday after softball. It's chilling now, will likely transfer and pitch this evening or tomorrow.

I need to get my plate chiller hooked up so I can start brewing/chilling/pitching all on the same day. The current method has worked great recently, but it definitely ups the infection risk some.

the only thing I accomplished was making a starter so I can brew tonight or tomorrow.

I will probably hold off ordering my next batch of stuff until next week. In the meantime I have to up my game on pestering rds for some of his brett to use in this sour.

Hoping to bottle tonight or tomorrow, then boxes are going out to Bottomland, B and you (for real! )

Should be about 6 new brews plus the collaboration Zap and I did.

Boo why'd you heat up the mead? Can't you just add warm water to honey and mix it up?

I've always boiled for a short time to make sure I'm killing off anything and everything. You probably could get away with not boiling if you wanted to.

2 tsp of gypsum last 15 min. of boil. The hops really shine vs. adding nothing to our water. The Epsom salt intrigues me. I add Epsom in my tomato holes when I plant so why not to my beer.

I really need to make a mead. I have tons of honey in jars gathering dust.

For mead I just add honey, 3 pounds per gallon. This one has 5 pounds each of clover, wildflower, and buckwheat. The previous batches I've done were all clover.


When I make cider I add brown sugar to the apple juice though.

Read How to Brew by Palmer and grab an extract kit from your local homebrew store.

That's what I'd do.
