With that glass carboy I suggest a carboy carrier of the nylon strap variety.

Yeah. I think the lesson is that a carrier of some sort will save you some broken glass at your feet. I think I learned that lesson on here from some of yall. Was told to definitely stay away from the "handle" type carrier that fits around the neck of the carboy.

Thats a big arse pot. We have a crawfish pot and burner but dont want to use the same pot.

Aluminum 40 qt crawfish type pot would work just fine. Maybe even a 32 qt.

The bigger you get now the less likely you'll ever need to upgrade
You can use a 5 gallon but you won't be able to do "full boils" and have a 5 gallon batch

I used my crawfish pot & burned for years to brew beer. Just cleaned the hell out of it before I used it for beer.

5 gallon pot is a waste of money. You want to do full volume boils even in extract. 10 gallon or better.

That was the kit i started with.
I use glass carboys and haven't had any issues with dropping them. But, the more i use them, the more i think of switching to better bottles (plastic).
Just a tip, get a brew hauler.

You just have to drop one to switch to better bottles. That's all it took for me. Been much happier with better bottles.

Yeah, get a plastic one later and save that one for the occasional beer that needs a long secondary/aging period.

I'm all glass. My primary is a 6.5 gallon. I have 2 better bottles I will probably give away.

How do you repopulate the yeast out of dregs? Is it simply by making a starter with the last little bit of yeast/beer remaining in the bottle?

Basically. If all I need out of the bottle is the bacteria rather than enough yeast to ferment, I will just dump straight into the fermenter. You really have to be slow with the starter though, small amounts and step it up multiple times to build up the numbers of cells you need.

By step up, do you mean start with say, 1/2 Liter starter, pitch dregs. Wait a day or 2, and add another 1/2 liter, and so on?
My starters are simple, 4 cups DME, 1 cup water.
