I was just reading about them being short on a lot of grain right now.

Why don't you use carapils in an IPA? I do.

Just tried it and.... Wow

This is a really really good beer. It could be a little drier, but I have impressed myself

It needs to warm up a bit to release its full flavors but damn. So far, I'm 2 for 2 with my own recipes

What did it end up at? I'm too lazy to look back through the thread.

I think I came up with a beer to brew tomorrow.

8 lbs Pils
3 lbs Rye
1 lb acid malt
~15 IBU for bittering
~5 IBU late addition
Thinking crystal for the hops.

Yeast will be a blend of French Saison, Brett l., and Brett c.

I also feel like trying out some new spices. Maybe lavender? I don't know, I'll see what smells good on the spice rack at Brewstock.

Few things are as satisfying as drinking your own beer!

Pushing 8%+ on the acid malt could give you a little twang and that should match up nicely with the Rye.

My last beer I brewed was 10% acid malt. Has a very nice, subtle twang. It didn't have any rye in it, only pils and vienna.

I'm sipping on a farmhouse that has a 15% rye backbone and I'm digging it. I want to see how it plays with the acid malt.

My farmhouse wit

I was so close to coming up with a farmhouse wit recipe tonight. I always think wits are a good idea, then I brew them and get bored drinking them rather quickly. I was thinking a brett or sour wit might change my mind, but then I chickened out.

I've done a 100% Brett Wit, that I thought was fantastic. Something to think about.

Was that the one you had at WYES last year? That one was pretty good.

Just got my brett starter going (probably should've done that last night) and will toss it in my sour wort pale ale when I secondary it this evening.

I just got back from Brewstock with my grain and hops. Was hoping to brew this afternoon/evening, but it's too hot. Think I might try for an early morning brew tomorrow. My back patio is in the shade in the morning and is nice. This time of day it's a blast furnace.

I thought about this too today, I'm kinda glad I didn't order the stuff to brew next weekend, it's hot as balls out

Ugggh... maybe I'm not being patient enough but I don't think the dregs from my Crooked Stave 100% Brett were viable. No signs of activity, no yeast sediment, no nothing. Anyone else have experience building a starter from 100% brett dregs?
