Poblano Peppers - What to do?

Bought a few thinking I'd grill or stuff them, but I've never cooked them before. Any ideas? Looking for something reasonably quick.
My fridge and pantry are pretty well stocked right now if I were to stuff them.

Char, peel, make a salsa and put it over something in your fridge or freezer.

Stick a knife in the poblano a few times and roast in the oven at 400 degrees for 20 minutes... then turn over and roast another 10 minutes.
Immediately after taking it out of the oven, put it in a ziploc bag for 10 minutes, then peel the skin. Put it aside. Throw out all the seeds if you don't like things spicy, keep about half the seeds if you do.
That will give you roasted poblanos.
My favorite is to put half of one on a hamburger with american cheese, half an avocado, and some arugula.

We made a spicy ground beef and veg mix the other day. Stuffed them, oven roasted, and coated with queso fresco

This is essentially what I ended up doing. Came out delicious.

Topped ours with a chili lime beurre blanc and served with potatoes.
