Guy from work just gave me several pounds of King Mackeral that he caught yesterday (already filleted).
What are some good recipes y'all got for making these babies taste good?? I'm a terrible cook so the simpler the better.

Not my favorite fish, I usually throw them back, but would be good to bake or smoke??

My dad and his friends used to catch them and grill/BBQ them.

Came out really good, but that was so long ago, I can't recall how they did it.

Grill hot and fast with seasoning of choice and a spritz of lemon juice TONIGHT...and maybe it'll be good. It's only good when extremely fresh.

Yeah, lots of hate on here for kings. They're fine grilled with a little lemon pepper and butter. I've had 'em Veracruz style which was also good.

This is the only way I eat them:

Cut fillets into thick fingers. Season very well. Smoke until done.

Works well on a sandwich but even better if you make fish dip out of it.

We caught several recently in Florida and we were told to smoke them so we got them smoked. It is the only way to go and there is a fish dip recipe on our charter boats facebook page that is really good at regular guys fishing charters.

This. The freshest way is to make a ceviche' with them. At this point if they were caught yesterday your best bet is to heavy salt them for a couple hours to draw out the oil then smoke them. Here in Florida we eat a lot of Kings when they are running. Hell of a lot of fun to catch.

I use an easy Ceviche' recipe from Costa Rica:

2 fillets or big pieces of King. cubed 1/4"
Juice of 2 limes
Juice of 2 lemons
1 large bermuda onion
5 or 6 peeled celery ribs. Diced
1 red or green bell pepper seeded and chopped.
1 habanero (I have used 2 Thai) chilis chopped.
2 large seeded tomatoes. chopped
1/2 head cilantro
Salt to taste

Combine in a large non-ferrous bowl, stir well and refrigerate for an hour or so.

Throw it on a hot tortilla and enjoy a cold beer with it.

Sounds kind of weird but coat in seasoned sour cream and roll in dry pancake batter mix and fry. This is basically the only way we would do it other than occasionally smoking some.

Cut out the bloodline and grill it on a hot arse fire. Season with butter, lemon, a dash of blackening seasoning, and diced onions.

It's a decent fish, it's not cobia, but it's also no choupique either.

King Mackerel is one of the worst fish in the water that some people actually eat....but thats just my opinion.

Whenever we catch them, they go right back in the water or cut up as bait. Just about as much as they are good for

After reading the responses ill probably just give the meat to someone else or throw away. I'm not trying to go through a lot of work cooking something I've never cooked before for it to taste like shite
