Healthier meal ideas for 20+ people

Have a big beach trip coming up. Looking for easy meal ideas to feed a lot of people. I think we did spaghetti, burgers, and jambalaya last year. looking for something lighter. Gotta look good with your shirt off, ya know. Less healthy ideas that can be paired with salad or veggies are welcome too

Fajitas? Grill some chicken or maybe beef and veggies, offer lots of fresh veggies too or even salad for a fajita salad. Get someone to grill and a couple of people inside to set up an assembly line with toppings. Everyone can fix them the way they want.

Do a cold shrimp and pasta salad. I just sent a 15 pound ham to the beach with a bunch of young adults. They'll have lunch sandwiches for days.

Grilled fish
Shrimp salad
Boiled shrimp
Watermelon and tomato salad
gazpacho
fish tacos
Fresh tuna salad



We buy and cook a lot of seafood when we go.

As noted above grilling veggies is healthy, it is also cheap and easy too. Marinated asparagus(soy sauce, a little L&P, fresh cracked blak pepper, red wine vinegar for a few hours) on the grill will make people swoon.

I made a pasta salad with Ditalini (small round pasta) that I also cut up bell peppers, zucchini, squash, into piece about the same size as the pasta and blanched them so they would get just a little tender and mixed it all together deserved with tzatziki dressing (it was a side for Greek burgers). You could add cut up chicken, ham or turkey to the salad and either mix with the dressing ahead of time or serve it on the side. It was delicious and very filling.

I sometimes pre-cook a few roasts for poboy/sandwich lunches and for supper for the first night. Quick and easy when you're getting settled in.

I also make sure someone goes to Calvin's and get a nice supply of the crack chicken salad.
