Ribs: Too Much Work for Too Little Reward

Babybacks at my local grocer this AM were $2.99/lb which is basically $10/slab. Boston Butts were $1.29/lb which is basically $10/butt. One slab of ribs MIGHT feed one person with sides. One butt will feed a dozen people easy. Butts are also WAY EASIER to cook and not mess up. Ribs require a lot of attention and experience to get right every time. I swear they seem to cook different every time for me......

I love good ribs, but if I'm cooking, it's butts.

A slab feeds 2 around my house pretty easily. They are completely different. I much prefer ribs to a butt to each his own.

Ribs take 4 hours on the smoker, while butts take 12+ sometimes. I prefer pulled pork, but its a serious commitment to cook it.

Agree

I find butts to be more work intensive because of the time commitment

A slab will also feed 2, not to mention we usually do sausage or chicken along with ribs

Yeah, if you're just eating the ribs I guess a slab per person. But when I make one, me and the lady split it easily. Usually with a side or two

They are a bit of work, which is why I utilize a rib rack so I can do up to four slabs. If I'm going to use charcoal and spend 8 hours to get them right, I might as well do more than one slab.

F that. I'll take ribs all day everyday. And not sure what you're doing wrong, but ribs are easy to grill.

I would believe that to be overkill. Five hours on smoker at 275°, wrap in foil, then three more hours in oven at 275°. The pork shoulder falls apart for me every time.

225 on the pit, smoke for 1st 8 hours, then just charcoal. No foil.

I've done it a number of times. We like it a lot. Cook it pretty much like a butt. If you don't want to pull it, take to an internal temp of around 180 or 185 for slicing. It will still be very tender.

I have smoked chuck roast before, I prefer the butts over the chuck though. Beef is a bit drier to me than pork. If you get chuck make sure it has good marbling or wrap the beef with bacon.

I enjoy ribs but usually the only time I cook them is if i want to smoke something that doesnt take 12+ hours

i do like crabs. what does smoking pork have to do with crabs?

The process if boiling them and you said ribs don't feed alot of people. Therefore, boiling crabs wouldn't be at tr top of your list either because it takes a lot of work to eat for very little meat
