I ended up with a surplus of cream cheese after the NFL draft, and have about 48oz. to use. Throw some ideas/recipes at me, please.

This and jalapeno poppers is why I bought the cream cheese initially; just bought way too much.

1 can hot rotel tomatoes
1 can Mexican rotel tomatoes
1 package cream cheese

Place cream cheese in microwave for about a minute to soften up. Add rotel and microwave another minute. Mix up well. Good dip to go with tortilla chips. Can add sausage if you want to go through the effort. I lived off of this before getting married.

eta: drain the liquid from the tomatoes before adding

as many have mentioned - theres a ton of options with dips, and the classic being cheese cake.

ive swirled some into brownies before and thats good. frostings often have it. sweet potatoes do well with it in them. can spread it on a variety of sandwiches.

itll sound dumb at first glance, but really it can go into a lot of places you would use cream or cheese as a change of pace.

King Arthur Flour featured a recipe recently for cheesecakes in a jar, baked in a slow cooker. See here: LINK /
Might be a good way to use up your cream cheese and share little jars of cheesecake w/ friends/coworkers/neighbors.

You can freeze it. It will get a bit crumbly, but if used in a hot dish, it will go back to a creamy consistency or I think if you microwave or heat it just a bit, you can stir it to a creamy consistency.
