WSM is the only answer. Best purchase I've ever made. Thing is built like a fort too.

I'm not a smoking expert, suspect I'm like you. Just want good food that I can make on the weekend without Too much hassle.

I got the cheapest upright water smoker I could find. $150 Brinkman from Home Depot. Sam's has some decent cheap ones too.

I've smoked, ribs (beef and pork), butt, turkey, boudin, brisket, salmon (one of my family's favorites),etc....

The one I got is propane. You can walk by and check the thermometer every couple hours and check the smoke. if you need more smoke, add more chips/chunks. gets up to temp (200 - 225) in no time.

Everything tastes excellent. I would recommend the same cheap set-up for your first to see if you like smoking things.

As a previous poster stated, the upright electrical smokers are really easy to use, and simple to cook food on.


Anybody have any experience with New Braunfels smokers? I was thinking about getting one from them

Any own or did own both a pre and post 2008 WSM? I'm wondering if the improvements are worth passing on the 2005 craigslist one?

Mine is from ~2005/2006, its fine and I'm sure there's several posters here who can attest to the goodness that's come off that smoker in the past 7 years.

If you have a good deal on the older model, get it. The updates are good and well thought out, but they will both smoke great meat.

I'll tell you the problem with using ceramic style cooker predominantly as a smoker....

By design they are very efficient because they are insulated. That is achieved by being able to burn a very small fire but contain the heat that the fire puts off. The problem you run into is that sometimes on long cooks the fire is so small that you have trouble producing good smoke from the wood your trying to burn. I have an Egg and still use it for long cooks sometimes but your going to wrestle with the smoke part of it. The WSM doesn't have this problem as it is not as efficient but you have a larger and hotter heat source that is easily accessible. If you need to add more wood to an Egg or Akorn, etc your pulling everything out to get to the fire.

The meat only takes smoke for the first 1-2 hrs, so if you have have much smoke after that, it's no problem. You want good smoke when you first throw the meat on.

i think that's debatable but that's for another thread. all i'm saying is smoke production is an issue i've dealt with as have others with ceramic cookers

Ok, so there is a guy in laplace selling a 2005 WSM for $150. It does not have a thermometer in it. Can I just drill a hole in it and install an aftermarket one or will that make the porcelain crack?

they didnt come with a thermometer in '05? that's a good deal if it's lightly used. i would think you could drill it but im not sure about the porcelain

wow didnt know that. honestly i wouldn't even worry about a dome thermo and i'd just get a maverick with dual probes
