It looks like it's cooked it in the shell? I guess to protect the meat from disintegrating.
Not sure how well that would work. Too many different, strong flavors going on at once.

Looks tasty to me, though I'm too lazy to leave the shells on. I make Suvir Sarans Goan style shrimp curry, and I bet it would be dynamite with crawfish in place of the shrimp. Recipe here: LINK
