Ingredients I have:

Sweet peppers
mushrooms
zucchini
onions
chicken tenderloin

Any ideas on what to make without having to go to the store for a whole lot?

What herbs and spices do you have available?

Leftover from the cancellation last night?

If you have some rice and a wok you could have a nice stir-fry.

yep. I did not use anything of what I had set aside, and had a measly salad for dinner instead.

You could saute the mushrooms and zucchini,

I'd make this...it is pretty easy and good, I usually add a little spice to it (cayenne, tonys etc)

I think just a quick sautee with a splash of white wine and serve it over some flavored rice would be easy, quick and tasty. Maybe a cumin flavored rice with some lime zest.

Stuffed peppers, with zucchini, onions and chicken as the stuffing. Mince the onion and zuch, brown the chicken and dice it (season all to your tastes). Mix that together, and stuff the peppers with it.
