I have had so much beer stuff going on recently that I don't know if I will have time to get a beer in this weekend. The next beer I brew is a big project though, maybe that is why I am not in that big of a rush.

I am making a basic Belgian Pale Ale, then putting it on close to 12 lbs of frozen figs for a week or so. From there it will go into my barrel where it will get Wyeast's Roselare blend and sit for 6 months. So big project, one that will force me to find a new place for the barrel since it is not really in a climate controlled environment at the moment.

I am then switching to lagers for a few beers I think. Who knows really though.

I went to take a picture of the leftover Pineapples and Mangoes leftover on the yeast cake last night and thought it was kind of disgusting looking pretty much.

It's the smells and the tastes that are enjoyable when it comes to homebrewing.

Got all my equipment sanitizing. Making a starter tonight and brewing my blackberry Wheat ale tomorrow.

I think i'm going to use ph 5.2 stabilizer. It says to put in the mash. Do you put it in, when you are heating up your strike water?

Put it in your water. You get an equal dispersion rather than trying to mix it in to the mash once the grains are in there.

I just checked on my Brett c. starter. Got a big ol pellicle going on.

Are you brewing with straight brett or is that getting adding to an already fermented beer? I ask bc if you are leaving it for a while, why bother with a starter? I am going to be adding the Roselare blend to a beer soon and thought about doing a starter but then said, why the hell go through that trouble. So insight would be interesting to hear.

Also, how did Zapp's go for y'all? I managed to not eat anything before hand and drink a little too much so I dont remember much of the festival.

Question about BR water and PH. I've been brewing all my brews with out any ph adjusting stuff. I think Baton Rouge water is 8.8 ph. What will reducing my ph to 5.2 do for my mash/brew?

Six one Half dozen the other. I've done it both ways with no noticeable difference in efficiency. Just have to stir thoroughly if adding water to grains. And I find it much easier and with less splashing to add water to grains than vice versa.

100% Brett. Been watching and reading a lot of Chad Yokobson's research on Brett. He recommends getting them up to lager yeast numbers and letting them sit for 7-10 days before pitching.

I had a good bit to drink as well. That last hour is a little blurry. I'd make a terrible bartender.

I don't think I ever managed to make it over to yall's booth. I think I went back in forth between ours and the Gnarly Barley/Parish/Chafunkta area. Then it all goes hazy.

I stopped by before the 3:30 start and chatted with him for a few minutes. But after the start, I was the same as you, with a quick trip by Red Stick for a taste of that quad that was so good.

I'm a fan of Citra right now. But i love all hops. Haven't found one i despise. Well, maybe nelson sauvin. Too grassy. But i did have it last year, and i know my taste buds are always in search of hoppier.

A few guys in our group really stepped it up. I barely have time to brew one batch for myself, much less 4 extra for a beer festival.

Once things got going we hit a bunch of CO2 snafus and we never caught up from it. I wasn't able to get away from the table until almost the end. Several our +1s we had to help up serve bailed on us. I hit up BMoney for his, but he was out by then. I did get my GF to snag me some of from Suspense and a Parish Farmhouse.
