Aight, 2nd night. Still not happy with the veggies, seem a little under cooked. Not bad, but I might be expecting too much. Wanted some grilling, but maybe the broiler won't work as fast as the steel.

Went Shrimp, green peppers, onions, fresh basil tonight.

Your knife skills need work. Consistent chop=consistent cook

Also take skin off onions

Well, the onions did sit in the fridge over night because they were left from yesterday. Didn't inspect for skin, so I think the part used was the very top of the onions so it might have that look.

I'll work on the size, I guess thinner would help on both onions and peppers.

Crust looks fine. I'm not a fan of onion on pizza...about the only thing I don't like with onion.

dough is to thick per my taste .. and yeah I see a paper thin piece of onion skin on there.

still, very cool that you're doing a lot of r&d .. eventually you're going to be putting out some dominant pies.

We are in discussions tomorrow for a white/pesto pizza.

I'm going to scour the pizza for skins and imperfections.


This dough didnt seem as flexible as the batch last night.

I wish i could discard those "mistakes" for you until you find a satisfactory recipe. They look delish to me.

Looks good, but I like veggies cooked more also. Maybe pre-cook them a bit in the oven before adding them?

I love onions on pizza.
