Use a starter, I fill mine up with about half to 3/4 way. Light then when they are white hot, put in smoker in middle of pile of unlit briquettes and place wood pieces on top. I've never had to add more charcoal.

Interesting. I just assumed that cooking for that long, you'd need more coals. When I grill, I use a full chimney starter and often have to add more.

How much charcoal do you think you use total? An entire small bag?

Maybe half a bag....just do a google search of "Minion Method" it will tell you all about it. The unlit coals will slowly light and help to maintain your temp throughout the cook so you don't have to keep adding.

Jim Minion made a lot of smokers' lives much easier way back when. I'd love to buy that man a beer!

I have an offset with a firebox, and if anyone hasn't tried it, you can use the Minion method with an offset firebox just as well as you can on a weber type.
