Male or female?
Either way check out the parents if they are on site. Make sure they have good health and good genes. Find one that is not too alpha, but not the little bitch that cowards down when you roll it around. Bring a ball and roll it in front of the pack and see which ones are interested.
Make sure they are registered and have legit paperwork.
Eta- these are suggestions. Without knowing the parents gene pool and awards/prizes they won, it is kind of a crap shoot. I have always just known which one was mine. Weird, but true.

Here is a short two minute video I found informative. It may give you a starting point.

I have a good bit of experience with labs and I can tell you to get the best bloodlines that you can afford...it is nice to have a dog that looks good, but that is not what is really important...try to stick with dogs from bloodlines that have done well in field trials...even if you have no interest in that kind of thing (I don't), the traits and instincts that allow a dog to do well in field trials are the same that allow you to train one to be a top notch hunting dog...

as for what to look for, that will depend on what you plan to do with the dog...if you are hunting where long retrieves in rough water are the norm, you'll want the biggest and strongest male you can get....if you are hunting from a pirogue in flooded timber, you'll want a smaller, less clumsy dog that can be kept calm and hide well...

In me experience with dogs, the runt of the litter is usually the smartest.

That's going to be hard to tell when they're puppies. The personality traits come out as the pup grows. If you can spend some time with the parents you can get a better idea of what the "might" turn out like.

Gave a 100$ for mine & he´s a damn fine hunting dog. Had the instinks & that was all it took. Have seen these high dollar dogs that is gun shy & you can´t take a gun around them.
My point is sometimes it´s just luck getting a good dog IMO

Tough to tell. I am a firm believer that you can help mold their personalities to your liking. They are people pleasers and will generally want to make you happy. Well, not so much at first. I will never own anything but a yellow lab.

I agree 100 percent. Im not into dogs with high dollar bloodlines, more about how the parents are in my opinion. I've never been impressed with the field trial dogs that i've hunted with.

it is really a matter of personal preference, but I usually like a pup with a good bit of energy, but not one that bullies the others in the litter...

maybe do something like letting them mess with a retrieving dummy a bit and then throw it 10 feet or so...look for a dog that runs after the dummy and wants to chew and play with it, but not one that has a problem with the other puppies playing with it at the same time...

you are looking for a pup that wants to play tug of war with you, but not one that tries to stay under your feet and just collappses when you pet it...

I hunt in marshes, so the dog's nose is important to me as well...I'll often put a little duck scent on the dummy and let the pack play with it for a bit...then drag it away and hide it and see who uses his nose to find it...if nothing else, just watch to see which one puts his nose to the ground a good bit...
