That is true. I tend to want to keep it simple, but I will try some different methods.

I always do. I grill my steaks outside and it seems to help with the sear.
I usually make a blend of sweet cream butter, crushed garlic, fresh rosemary and a bit of Worcestershire that I re-chill. I melt it over the steak during the resting period.
My wife only likes filet and this treatment is necessary as filets are pretty bland. Bone-in ribeye if my favorite cut.

Thanks to all for the help. I applied just salt and pepper, no oil. They came out superb.

We should have a big Steak-Off and let everyone try the different types of methods. There are a lot of different things I see on here that I've never tried and wouldn't want to experiment on an expensive piece of meat.

Yes. I guess because I think it opens up pores or something and makes the seasoning stick better?

I pan fry since I'm in an apartment. I use a little olive oil for non stick and salt. I wait for pepper after so it doesn't burn the pepper.

I coat in a little safflower oil before adding kosher salt and black pepper. I add a pad of butter when I take it off and put it under foil to rest.
