Funnel Cake info needed

Our church youth group has a food booth at the strawberry festival each year to raise money for their activities throughout the year and this year they have added funnel cakes to the menu. My question is pretty simple.......what can you tell me about the making of funnel cakes. We understand the basic concept but the particulars are what I am interested in. What type of oil? Which batter is the easiest and best? What types of fryers have you used and how happy were you with said fryer?

No answers to the questions you posed, but I can offer one tip: try using a power painter setup to dispense the batter directly into the fryer. You can mix a 5 gallon bucket of batter at a time with a stirrer attached to an electric drill, then use a submersible pump and wand to squiggle the batter into the hot oil. Clean and neat.

Need shallow 2-3" oil and a ring to contain them if possible. Keeping oil at temp is a challenge if you cook a lot of them

My brother is a missionary, and we were going to do funnel cakes at the strawberry festival this year for his non-profit. We had some last minute problems with securing a spot at the festival, so we are no longer going. I think (and i'm sure he would too) that allowing his church to use the equipment (fryer, rings, mixes, pourers, etc) is the right thing to do, instead of leaving the thing sitting in my warehouse that weekend.
