I can't see youtube here, but what technique are they using. I think it was Bill Dance that demonstrated the technique where you press down to disengage the barb, then yank with a loop of line. I just can't imagine intentionally hooking myself.

Push through and cut?bend barb and back it out
Back it out with barb

This is all after he pushed 3 4/0 hooks into his arm for the demonstration

Yeah, I don't need to watch that. I don't need to practice, either. To this day, I've never gotten down to the barb. If it does happen one day, I'll deal with it then.

When I was 8 years old I was fishing with my family on my Uncle's property. My sister who was 11 was fishing beside me. She reared back to cast and when she went forward, her hook swung around and hooked me on top of my head.
My uncle cut the line and they took me to the Doctor's office hook, worm and all.

So does this guy actually hook himself then tell you how to take it out.

I caught one in the cheek when I was 6 or so. it was my own doing. I guess up to that point I had only seen people fly fish and thought it try it out

What he did wrong was not securing the string to the hook, so it moved out of position during the jerk. Check this guy's method: LINK
