Vegetarian recipes?

I'm looking to start incorporating some vegetarian meals into my diet. I did a search and only found a vegan recipe thread which didn't have many responses. It did have a Thai vegetable curry that sounded good .

Just made a really good and easy vegan dish tonight. Curried basmati rice with chickpeas. Recipe suggested adding golden raisins and toasted almonds. The ingredient list was white onion, celery, garlic, can of chickpeas, basmati rice, vegetable stock, and curry powder (besides the raisins and almonds).

Total cook time was under 30 minutes. Will make again.

I don't have any recipes, I just throw together lots of onions, garlic, tomatoes, eggplant, curry powder/garam masala, coconut milk, coriander/ginger, etc.
Play around with it . . .

Potato pancakes with applesauce.....chilled bean salads....Asian noodles with lots of veggies and bottled peanut sauce. Sautéed portobellos and diced water chestnuts with onions and hoisin sauce make a great meatless filling for lettuce wraps.

There really are many options, just have to think out of the box a little. Tonight I chopped some onions, red/green bellpeppers, mushrooms and garlic, sautéed in olive oil for a little. Added 2 chopped sweet potatoes, black/pinto/garbanzo beans and quiona. Added some veggie stock and water. Season to taste. Let it cook for 45-60min. Really any of these ingredients can be subbed to cater to your liking, I usually use whatever I have on hand.

Sweet potato black bean burgers can be made fairly easily.

I was at an event last night that served a vegetarian casserole which consisted of eggplant, squash, portobello, spinach, black beans and cheese. I, personally, can't have cheese, but that dish looked incredible.

Why no cheese? I take it you are vegan but what are your reasons for eating a vegan diet as opposed to a vegetarian diet?

You are correct, I am vegan. Just a personal choice that works well for me. I was vegetarian for a year prior to the switch (roughly a little over 3 months ago). I wanted to try it out and I ended up loving it.. So here I am still sticking to it.

Easy, sautee some baby portobellos in soy sauce, serve them with chopped pistachios over them..... Great appetizer

Are you still eating fish, or looking to go all vegetarian?

I feel like most things can be altered to be veggie. Like:
-Black bean or veggie patty instead of beef for a burger
-mushrooms instead of meat in a burrito/taco salad/other mexican dishes
-tofu instead of meat in most chinese dishes
-veggie bacon exists
-just don't put pepperoni on your pizza and load it with veggies

If you're talking vegan, that's a little harder since there is no dairy or eggs.

Vegetarian Spinach and Mushroom Lasagna

1 1/2 pound cremini mushrooms, roughly chopped
1/2 pound shiitake mushrooms, roughly chopped
Salt
1 generous cup of chopped onions
1/4 cup olive oil plus more for keeping the noodles from sticking to each other
4 cloves garlic, chopped (about 4 teaspoons)
1 6-ounce can tomato paste
2 cups tomato sauce
1 28-ounce can crushed tomatoes
1 cup water
1 Tbsp dried thyme
1/2 teaspoon red pepper flakes
2 10-ounce boxes frozen chopped spinach, thawed, squeezed in clean towel of excess moisture
1 lb lasagna noodles (16 to 20 noodles)
1 15-or-16-ounce container of ricotta cheese
1/4 cup chopped fresh basil
1/4 pound pecorino or parmesan cheese, grated (about 1 cup)
1 pound shredded mozzarella cheese (about 4 cups)

You can replace the pasta with Sliced egg plant, Bake the egglant 1st reduces moisture.

I do this a couple of nights a week too. I mostly just make a soup - bean soups of all kinds. It's easy too, just soak beans overnight and put in crockpot in morning with onions, etc. Tomato soup is easy and you can do all kinds of stuff with it. Eat them with a salad or grilled cheese sandwich. Lentils are good and easy too.

I have not had success with stir frying it, I usually consume it in a soup.

chop up mixed mustards, collards, turnips, kale with sauteed onion, garlic, bell pep and jalapeno. make stock with wine or beer or veg stock. cook it down for an hour and serve over brown rice.

Did you press it? Buy extra firm and press it. I wrap in paper towels and kitchen towels then put a heavy book and cans on top for 30 minutes to an hour. You have to get the water out. Also freezing it then thawing before you use it will give it a chewier texture.

this.

i get the extra firm, press the water out, cube it, then fry it seperately before i do the veggies. lastly, i add it back to the stir fry.
