I have some leftover boiled crawfish and I would like to put them in something to go on top of grilled ribeyes. Besides the traditional etoufee, any other ideas?

Butter and flour roux
add chopped onions
slowly add whipping cream
add crawfish tails, green onions and parsley
Season to taste

I don't have measurements in front of me but I usually just wing it anyway.

There was a thread on this within the last couple of weeks---see if it shows up in search.

Why would you put that stuff on top of a steak?

Look up Emeril's recipe for Crawfish Imperial. Food network site I think. It's real damn good.
