Jambalaya with Bacon and Tomatoes w/ Pics (Critics Welcome)

I came across a recipe for jambalaya that is different than how I normally cook one, so I decided to use the second half of a pork shoulder that I cooked try it. How I cooked that pork shoulder can be seen in this thread:

First, I cooked some diced bacon until the fat was rendered:


I then sautéd an onion:


Next, I add bell peppers, celery, sausage, and the cut up pork shoulder:


I threw in some chopped up tomatoes:


Then, I added the rice and chicken broth:


Finally, I added some green onions and let it cook:


Finished product:

The bacon made the biggest taste difference. Other than that it was pretty similar. However, I really liked the flavor that the bacon added. I will probably continue using it.

Looks very flavorful. I doubt you had to even add a pinch of salt.

looked good until you added the tomato . However, I might try this with added onion replacing the tomato.

It's funny that you say that. I forgot to season it, and I started eating some. It was still very good. It didn't need much of anything.

It's different but what the hell it looks good and if you like it. Plus you clarified from the OP.

Only thing I would do is cpsave the green onion until ready to serve and just fold in late. I don't like them cooked down. I think you lose the flavor and freshness.
