I use the Tony's Seafood/LA Fish Fry etouffee mix with extra seasonings, extra butter and I add onions. Mine comes out silky & delicious too. It's better than any etouffee that I've ever had that's made from scratch.

That Mexican cornbread waffle does look pretty delicious.

The waffle thing is something I've been wanting to do as something different for a good while now and it was really good. What's good about these is you can make a bunch and freeze them and just pop 'em in the toaster, smear a little(or a lot)of butter and enjoy! That said, I made about 7 or 8 nice 7" round waffles but I don't think they will last very long.

I get the recipes up later today.

I talked about savory waffles on the board a long time ago. Never did play around with that, but I think it's a great idea with endless possibilities along with savory bread puddings and sauces.

Thanks for helping me pick my Thursday night dinner. I was making my list earlier, and hadn't decided yet.

Been a while since I've used my waffle iron and even longer since I made an etouffee.

It's the sticky thread at the top of the page. All recipes posted there eventually go into the TD Recipe Book in the first post of the thread. Wink updates periodically. It's a great reference.
