Whatchu got laying around chili - somewhat picture heavy

Please note that for this chili we ONLY used what was at home regardless of brand. Usually when we make chili we go shopping and get "the good stuff".

So this morning it was pretty darn chilly outside, and by noon the little bit of sun that was out disappeared behind the clouds. We were discussing our food options, and quickly agreed we didn't want to drive anywhere. So what could we make at home? After digging through cabinets, and checking the fridge/freezer we decided chili would be a good option. So we dug the following out. Defrosting in the background (not in pic) is also a pound of ground meat.



Let's get the onion and minced garlic simmering in some hot canola oil.



Next, chop up our hot sausage and turkey bacon (we usually use regular bacon.)



Now that our onion/garlic mix has simmered and browned a bit we add our chopped meats.



Meat is defrosted. In this case it was 75% lean. Usually go with something a bit leaner, but it's what we had. Add to pot



1.5 cans of diced tomatoes + 1/2 can of tomato paste. This one, and also a can of fire roasted diced tomatoes.



We also add our seasoning (paprika, chili powder, pepper, garlic salt, cumin, white pepper, crystal)



Now let it simmer. In the meantime, chop up some chives.

Two things I would have done differently. I would have cooked the tomato paste in the onions and garlic and would have seasoned every step(except the bacon and sausage)along the way. Those two tips will add more depth of flavor to the dish.

Thinking about making that exception myself tonight. My dad's 71st birthday dinner at my sister's house. Not sure yet.
