Ok so I've decided ill try them 4 different ways then make everyone taste all 4 and see what they think
The great catfish experiment.

-mustard
-mustard/beer
-hot sauce
-buttermilk

I will use the same dry seasoning on all of them.

One thing I started doing recently that I enjoy is cutting the filets lengwise into long slender strips. The pieces then curl when cooking. I just love that.


You cornmeal people are crazy. I use the lightest/finest fish fry I can find.

Corn flour which is the main ingredient in most fish fry batter mixes makes for delicious and crisp fried fish. The trick is using ice cold fish.
I like a combination of corn meal and corn flour seasoned.

I like corn flour and flour. If the fish comes out dark and grainy, I'll eat it, but I'm not real happy about it.

Don't overcrowd the fryer. It will lower the oil temp too much. Won't be as crispy.

Yup. Used to happen to me when I used a fry daddy. Now that I have one of those basket fryers with the element in the erl, I never have that issue.

So when I went to albertsons I stood in the flour aisle quite a while like a dumbass. There are so man different kinds!!! Corn meal corn flour white yellow enriched, etc.

Zatarains extra crunchy uses corn flour.
Tony's extra crunchy uses corn meal.

I got the Tony's and a bag of the Shawnee best enriched yellow cornmeal.

I use 1/2 Zatarains "seasoned fish fry" and 1/2 "crispy southern" but I'll eat it with more or less flour or corn meal.

Coat with the blue box of Louisiana fish fry
(has to be the box, says crunchy on box)

Fry until they float
