For my context all I do is gaming but I understand what you are saying.
Side note, should I be paying attention to my fan speeds? I can control my case fans on the front panel. I tried different voltages with them but the CPU/gpu fans were loud enough that I couldn't hear a difference so I left them at max voltage. My guess is its the gpu fan that is the loud one but I'm not sure.

Yea, case fans are are quite compared to component fans. I just undevolt casefans to about 6v and let it ride. As long as you are getting good air flow it is probably good enough.

Should I mess with the gpu/ CPU fan?

No, not really. Your PWM controller will take care of that.
I use a custom fan profile with precision x and afterburner but your PWM should take care of cooling.
