Im always upgrading 3 defenses at once. But at TH8 I've still got plenty of defenses the way I do it.
3 mortars, 3 wizards - 1 builder always upgrading them.
5 archers, 5 cannons - 2 builders always upgrading them
then 1 builder always upgrading Elixir upgrade able objects. Otherwise I just build up a ridiculous amount of Elixir.

I get close to 1200 trophies, then get raided multiple times yesterday while away from the game doing family stuff, and I'm back down to 1111.
