Ok F&D board - gotta cook some specks that have been frozen for 90 days - give me your best recipe.

Looking beyond fried, pan fried, etc....

On bigfishfinder.net they have a recipe from GW Fins for fried speckled trout fish taco's with a Chipolte slaw that looks awesome but I have not been able to try out (no fish).

Dilute creole mustard slightly with white wine - put Specs in a buttered baking dish, drizzle mustard over fish, add a touch of garlic powder, black pepper and bake (325 for long enough), eat with wild rice and stir fried fresh green beans (french cut with water chestnut slithers).
