Speaking of skin, could I have a piece of that chicken skin? Looks terrific!

I cooked some fish in a skillet. Unidentified fish, caught by my brother in law and given to me at Thanksgiving. I put it in the freezer but forgot what kind of fish it is.

I have 3 or 4 more bags of it. Whatever it is, it's good. (white, flaky fillets)

Caple I love the potato skin on... I like the taste/texture of it and I believe the skin has a lot of nutrients

Me too and the fresh herbs and raw shallot and scallion add a nice freshness.

Yea just had leftover scallion tops and a knob of parm in the fridge. I make scallion cornbread alot though from having the leftover tops. Buttermilk cornbread doesn't need much help but the onion is nice
