Cast iron for a second and done. That's the most important part. Don't cook too long or think too hard about it or you have messed up...

Too late for you but I love a simple tuna tataki. Rub the tuna in olive oil and crust with course sea salt, black pepper and cayenne pepper. Sear on all sides and rest. Slice thinly and serve on a plate with shaved carrots, sliced seedless cucumber, green onions and ponzu sauce. I recommend washing it down with Asahi beer.
The wife and I will eat this as a entree over field greens tossed in a ginger dressing and all the above plus tomato. It's a great light meal.

Sea salt, fresh ground black pepper, a really hot grill and a little butter for a hot quick sear.

Press one side of the tuna into toasted sesame seeds and sear that side down first, not too high of a heat otherwise the seeds will burn. After you flip it and plate it that side up, the sesame coating (crust) will give it a nice visual presentation and add just a slight bit of taste and texture variation.

I have been wanting fresh never frozen tuna.... Dunno why... Just want to see if there is a taste difference... That being said.... I have a salad recipe that I want to put a nice tuna steak on... The salad is baby organic mix, roasted chopped pecans, grape tomatoes, red onion, and feta cheese.... It is topped with a vidella vinegarete dressing... Had it at a faculty dinner given by PTA, and the salad alone was great... I however, would love cucumbers in it... Then I thought about a nice tuna steak on top... Haven't tried it yet though.... I may get bashed for this but I watched an episode of one of Bobby Flay's shows where he made tuna salad sandwiches from tuna steaks years ago.. I like tuna salad so I thought it would be interesting to taste that.... Tried to link from IPAD unsuccessful.. Go to foodnetwork search tuna under bobby flay I believe it's the first recipe to come up

Look up some Poke recipes. The ogo will be hard to find but it's not required. It's better than ceviche in my opinion.
