Pochep, actually that recipe looks close, but the picture sucks. It clearly doesn't show the ingredients in the recipe. Picture fail.

Yea they screwed the pooch on the pics they provided with that mess.

I look forward to that recipe, but this was not a baked casserole. I bet the chicken and veggies were sauted in a pan and then added to the cooked spaghetti. I'm sure a secret ingredient was included somewhat in that masterpiece of MS culinary eppicurian delights.

I hate chicken spaghetti too. I don't think chicken should be in a red sauce dish.

Now, if we're talking about the cheesy chicken pasta.. no red sauce.. possible baked? .. My mom used to make something like that. Fettuccine noodles, chicken, cream of mushroom, velveeta, onions, etc. and bake it.

Basically.. processed crap But as a kid, I adored it.

This is the one I'm thinking of:

(1) 8oz. package of spaghetti

Vegetable Cooking Spray

1/4 cup margarine

(1) 8oz. Velveeta cheese, cubed

4 cooked chicken breast halves, chopped

(1) 10oz. can cream of chicken soup


Directions:

Preheat oven to 350 degrees. Cook spaghetti according to directions, drain. Place in 13x9 baking dish coated with cooking spray. Melt butter in large skillet over medium heat. Add onion and saute 3-5 minutes until tender. Add cheese and tomatoes and chiles, storing until cheese melts. Stir in chicken and soup, blending well. Pour mixture over spaghetti in baking dish.

Bake at 350 degree for 25 minutes or until bubbly.

Tip: I think it is easier and the recipe tastes better if you split the amount of spaghetti and mixture in half and bake it two separate dishes. Otherwise, you will have trouble fitting everything in to one dish and the finished product is saturated in the mixture and can be quite overwhelming.

Found it on a southern cooking website via googling "Mississippi Chicken Spaghetti"

I don't know that I'd eat a Velveeta/Cream of Chicken baked mixture now, but I remember liking it.

There are two kinds-one with velveeta and Rotel, and one with a gumbo-like recipe, except you swap red sauce for the roux. Cook down the chicken til it's stringy, use the broth for the noodles...add mushrooms...yeah, that's the one I like. Serve on top of noodles not all mashed together like throw up

was popular in the 80's.. Don't know why it fell off the food map but it's one of those large dish-comfort-food meals that hit the spot when you're craving that type of food.

(side note) I see Turkey Tetrazzini on the hot bar at Whole Foods and it always looks awful.. warmed over, greasy, not much meat. Can be done a lot better. imho
