Fried whole hog

I have a friend in Central Texas that is a hog hunter. We were discussing various preparations for some of his smaller hogs and we started to wonder if you can fry a small hog like a turkey. There is a youTube video that shows one guy doing it but I am wondering if anyone has tried it. If so how was it? Should we inject and fry away or just smoke 'em. TIA. Recipes would be welcome from those with success.

Wouldn't be worth the cost of the oil unless you were doing lots of hogs, and I honestly think I'd rather it smoked. Those suckers are so fatty they don't have to be bathed in oil. They'll break down in their own fat.

I have a crawfish pot that would do it, but I wouldn't even consider it. The oil would cost well over $100.

I think it would be a waste of pig.

Some Mexican dishes have boiled pork that rests and then gets fried right before serving. That is good. But frying the whole hog wouldn't be the best use.

Smoked whole hog is better.

I've had fried Boston Butt....... it was injected and rubbed down then fried at 8 minutes per pound I think, it was very good. But not better than a smoked pork roast.
