Says everyone, until someone does. I've taken several food safety classes. The scariest thing you will see is around botulism. The example used is a cook at a diner who for years made sauteed onions and stored them on the counter in oil. Nobody ever got sick. Then one time, botulism was present and the poor bastard killed 37 people. All it takes is once.
