Recently got a pound of Simcoe hops and want to do a Pale Ale and then an IPA. Does anybody have a good American Pale Ale Recipe that I can use Simcoe with?

Sounds like a plan. Would I use 9 pounds of 2 row? I've been getting about 82% efficiency.

Lowly extract brewer here for the moment. Whatever will give you about a 1055-1060 post boil gravity.
