What knives are considered essential for a kitchen set? My family has started purchasing nice knives for me as part of my Christmas each year. So far I have a 6" utility knife, 5 1/2" chef's knife and two paring knives. These things are $$$ so while I will only get one or two a year I don't want to waste a year on a knife that isn't going to see use. TIA for any information.

8" chef's knife Fillet knife Other items that may be very useful if you clean/dress whole fish or poultry are a good serrated blade and a good set of shears.

Right on, I use a Chefs knife for 90% of my cutting work and a 5-6" boning knife for about everything else. Maybe its just me and what I cook but I never seem to use a paring knife..

I scored the 6" Chef, paring and carving Wusthof's for Christmas. They must be a grade above the classic since they have walnut handles. By far the best gifts I received this year and will be used often. The wifey must have a dirty little secret because I know she dropped a pretty penny on them.

Just buy it and ask no questions. Mine is 45 years old. My mom and dad have the same knife 60+ years old. Carbon steel. I have a thousand dollars in knives including many recommended in this thread. This is my favorite for cutting a chicken, deboning, trimming meat, whatever. Chicago Cutlery Fillet knife Fillet Knife No telling how many times I've used this one in 45 years.

I fully expected to hear it when I was typing it out. But yeah, every kitchen needs a 6" stiff, curved boner.

Final coat of finish went on my table last night. Gonna put in the granite tiles this evening. Should be ready by tomorrow night!

Thanks for the replies so far. My kids have purchased Shun knives for me so I'll be sticking with that brand. I'm ordering a honing rod so I'll have it around when it is needed. I know I want the carving set. I do use a carving knife several times a year. It seems from the responses that I should be looking at general all purpose knives. Thanks again.

I've seen that deal pop up a time or two now. I've nearly squeezed the trigger a few times. That's $30 lower than you'll find the same set on Amazon. I just dont see the utility in that smaller serrated knife.
