Hog backstrap recipe ideas?

Got a couple of hog backstraps from the in-laws on Christmas Day. Look like they both weigh a pound or so.

Any suggestions what to do with them? I tried Googling "hog backstrap recipes" and the results were a little grim -- such Food Board favorites as marinating in Italian dressing or stuffing with cheese and wrapping in bacon were suggested.

Last week i threw mine from last year in the crock pot and made pull pork poboys. Came out great

I'm usually down with pulled pork poboys, but I kinda want to do a little something special with them, like making a nice dinner for me and the wife Saturday/Sunday night. I may try to find a nice orange glaze or something

Maybe try brining it first then grill to desired temp then maybe a glaze made with some fresh apples to go over the top when serving. Match it with some baked or grilled sweet potatoes and a nice bottle of Pinot Gris. Dang I'm hungry now.

Google search recipes for pork loin. I will buttfly then stuff them with veggies/fruit and cheeses then truss them up and glaze as they cook.

Cooking a lean piece,of meat for a long time in a crock pot seems like a bad idea. This is a single muscle, no? A quick grilling seems like the right approach.

Cut into medalions, then fried is great on a biscuit!

Also, sliced into medalions, and grilled over charcoal. Season with salt, pepper, and garlic. Right before taking off the heat, put some hot pepper jelly on them. I love this!

Braswell's is a GA based company that makes some good pepper jelly.

Smoked over low heat is good stuff too! Rub with your favorite seasonings belnd and slow smoke.

Lots of ways to fix it.

I like to slice it and bread it and then fry it like you would a pork chop. Then make some white gravy with mashed potatoes and its really good.

Make cornbread dressing and roll it like a jelly roll. Pound flat before rolling if needed. Season with garlic salt and pepper. Bake off in 325 degree oven, secured with toothpicks. Should cook in 45 minutes.
