Hoghead cheese...Do you eat it?...Make it?

I watched an episode of John Folse today and he made his own hoghead cheese and it got me to wondering how many people do this.
Also I can't tell you how many people I know that won't even touch this stuff!

Also showed Donald Porches's smokehouse in French Settlement. That man sure knows what he's doing when it comes to smoking meat. He has the best hoghead cheese I've ever eaten!

Love it. I slice it up and put it in a single piece of white bread folder over with a a squirt or two of mustard.

Ate it at Cochons and loved it but didn't know I was eating it.

I love to eat it, but have never made it. A local man used to make it every year and would give some to folks passed away about 5 years ago. I sure do miss his hogshead cheese.

There is a little country meat market between Thomasville and Cairo, GA that has it. When I was doing outside sales, I would always stop there and buy a 1/2 pound, a 1/4lb or so of hoop cheese, a sleeve of saltines, and a Coke. Best lunch going.

I live a couple of miles from there and have never stopped. I never knew it was well regarded and the place looks like someone is selling meat from their home. I might need to rethink this...

Seriously ,stop and try it!! Last time I stopped and bought a couple of smoked ham hock(sp?) for white beans and they were great!! He has a full butcher shop of smoked meats. The porkchops and damn good also!
I have no ties to this place other than being an occasional customer but I tell everyone about it and have heard back nothing but good things.

I rather make it with turkey wings and necks though. I find it has a better taste, it "sets" easier, and is somewhat healthier.

Never had it or made it, but saw a episode of diners drive in and dives and they showed a guy making it with very detailed steps. Looked pretty tasty and easy to make. Just time consuming do to soaking in brine and slow cooking, etc.

I pass by there going the back way to the Tickfaw all the time. I need to stop next time. Have bought his sausage in LeBlancs (I think) and its really good.
