Pork and Garlic smoked sausage in a gumbo?

So I stopped by Johnson's Boucaniere this past Saturday for a BBQ plate lunch, which was amazing, and saw they had Pork and Garlic smoked sausage. Well, this Friday I'm going cook a large gumbo in Houston. I was thinking about buying a few packs of this instead of typical pork smoked sausage, however I'm hesitant. A part of me thinks it would be fantastic, but a part of me thinks it could fail miserably.
I'd hate to bust on a big gumbo for a rather large group of people.
Thoughts?

Nope, go with your definite when feeding a crowd. Pickup a pack and make a small gumbo for a small group one day and get a group opinion.

I don't use much garlic in my gumbo, which makes me rethink it.

I'd also stick with the usual program for a crowd. Get some of the sausage and taste it to see how heavy it is on the garlic flavor and then experiment if you wish as someone else suggested.

Definitely do this. I actually tried to make gumbo with a jalapeno deer sausage. It sucked. moral--don't try stuff on big groups you don't know the outcome

looks like i'm going to steer clear of that sausage for this gumbo.

You could always get a pack and dice it up and add it to the gumbo in addition to your regular sausage. I think it sounds good, I could see where the jap one would suck but smoked garlic sounds damn good to me. But I get not wanting to experiment to feed a large crowd.
