What, you don't think that Chimes brings in their own duck?

Rag mentioned Portobello's gumbo in a thread not long ago, and I agree with him...An Italian restaurant is not the kind of place you'd expect to get awesome gumbo, but their gumbo is delicious.

I'd think it'd be a little illegal to call it duck and sausage if its really chicken...

This. Domestic duck is a readily available product. I can drive to Rouse's and buy some right now.

How much does that Domestic duck cost you? Last time I bought one it was close to 20 dollars and the meat was NOTHING like what is served in the gumbo at Chimes.

Chimes served chicken, calls it duck and charges pretty much the same rate for it as typical bowl chicken gumbo. They may be putting a tiny bit of duck in it so they can call it duck but the shite is almost all chicken. We even had a worker here from Chimes once say as much.

I ate this today for lunch. If there are folks that think this is good gumbo they just havn't eaten good gumbo. No roux taste, thick like a stew. The meat was definitly chicken meat too. The andouille had no smoky flavor. IMO it wasnt worth eating much less paying to eat it. I'm not bashing Chimes cause I love the place. Go there a couple times a week to drink and eat apps that I think are good. But their gumbo sucks arse.

The cold beer was good though so there's that.
