Don't forget that if you're grilling, you can break off a sprig or two and use them for basting your entree. And if the sprigs then drop through the grate into the fire, that's not bad either.

They can also be used as skewers, especially for shrimp.

GG, what is your opinion of infused olive oil. I've read some stuff that it's easy to do at home. Other stuff said it's dangerous for bacteria. I use a lot of olive oil and I've got a lot of rosemary and other ingredients.

I have been thinking about this too. Rosemary would be perfect for it.

Thanks for the replies, folks! I have 2 large bushes of it, and rarely use it.

You can use your rosemary tree (if it's in a pot) in the house during christmas.. They smell good.

I haven't studied up on it. I like some of the infused oils on the market, but when I want to make my own oil "herby", I just do the amount I want to use or a little extra that I'm going to use in short order. I just let the oil heat a while with the herbs in it. I stick the leftover in the fridge, but I usually use it pretty quickly.

Mine are in the yard, but I put twigs in vases and rub them a bit. Love the smell.
