Hi all,
I have a potluck this week and I was planning on making some stuffed jalapenos. I was thinking about trying this recipe again:
1 lb andouille - diced and browned, then blended w/
3 bricks of cream cheese
and then spooned into jalapenos, halved and defleshed/deseeded. Baked for 20 mins or so at 400F.
Thoughts on this recipe? Anyone have one better (i want to avoid bacon wrapping or frying)?
Thanks guys.

I like to throw a little chorizo and Queso Fresco in mine.

If not wrapping in bacon, i like to fry them

I have always had them stuffed with breakfast sausage and cream cheese instead of andouille. Talk about delicious.

use chorizo from whole foods and wrap in bacon

I make mine w/ goat cheese and chopped bacon. Plus I prefer to grill them over an open flame because it mellows out the pepper a bit and brings out a nice flavor.

Cream cheese, shredded extra sharp cheddar, chives or spring onion, fresh garlic chopped fine and crumbled bacon is good IMO.
