Crawfish fat for an etouffee

You see recipes called for the fat to put into the etouffee, but the frozen tails you find at the store I dont think has the fat in them. Is there another way to get them or another alternative?

La processed tails should have fat in the package. For that matter, I think the Chinese products will too, but they cause abnormal hair growth and genetic mutations in your offspring...beware.

As Otis said the fat is in the packaged tails and be sure to read the label closely. It does seem a lot of Boudreauxs live in China.
And when I empty the package I add a few tablespoons of water to it and shake to get all of the fat out.

My favorite etouffees are those made when live crawfish are in season. I use leftover boiled crawfish and I can really harvest a lot more fat for the etouffee.
