We have deep fried whole hind quarters from smaller does and backstraps before. Hind quarters work The best. Inject just like turkey. Backstrap is very good too but can't cook it too long, dries out quick. I don't remember exact per pound cooking time. I wanna say like 2-3 min for med rare. Basically just fry til it's crisp on the outside.

I fry my butterflied backstraps, but just in a frying pan with some seasoning and flour. I've never deep fried them. It seems unnecessary.

not a bad idea since I've whole fried a boston butt, but I think backstrap would be too dry in a fryer.

I wood grilled a flank steak last night....and it was one of the finest things I have put a fork to in quite some time..

Mrs. Choupique marinated it pretty well.....

I had wood grilled skirt steak last night.

IMO two of the most underused pieces of steak.

Don't tell anyone. I got skirt steaks for $3.50 a pound yesterday. If the word gets out they will get as high as ribeyes.
