I agree. I just use the smoker as an oven. Works great.

Just took my bird off 30 minutes ago. 250, 4 hours indirect, mesquite smoked. Brining is key to good turkey. My bird soaked overnight in a cooler. Moist as hell. Best ever.

Mine was perfect. 6 and a half hrs at 225 degrees. Great smoke ring. Moist moist moist. Brining is the key, I have to agree

Is there a reason everyone seems to be smoking at low temps? Why not smoke it at 350 or 400? This way it be a done in a few hours and the skin will likely still be crispy.

I woke up and put mine on the smoker about 5:15. Turned out damn good.

I'm no expert, but seems that you could have some drying out problems with too high too quick.

I cook more for temp than time and mine was done at about 4 hours.

Exactly what USMC said. Cooking for temp. The skin on my turkey was actually very crispy.
