This makes me think maybe a guacamole w/o the mashing would be good. More like a salad made w/ red onion, avocado, tomato, and a dressing made w/ lime, olive oil, garlic, salt, pepper, cumin. I think I will try this.

I think that would be a good choice. Not sure I'd use the cumin though since it's in the chili. Might be too much that's similar in flavor, BUT making a guac salad that simply not mashed is a good side.
Melons are a good choice as well. A watermelon salad with onions and jalapenos, cilantro and lime is refreshing.
